Boiled Chocolate Oatmeal Cookies

The Record’s “Recipe of the Week”:
Boiled Chocolate Oatmeal Cookies (or Blondies)

2 cups chocolate chips
1/4 cup butter
1/2 cup milk
1/2 cup peanut butter
3-1/4 cups quick oats
1 tsp. vanilla
1/2 to 1 cup nuts

In the top of a double boiler, melt the chips with the milk and butter, stirring regularly. When smooth, add the peanut butter & stir until smooth.

Meanwhile, put the oats in a large bowl & drizzle with the vanilla. When the peanut butter mixture is smooth, quickly stir in the oats. Combine thoroughly. Add nuts if desired. Drop by teaspoonfuls onto waxed paper. Let cool.

To make blondies, replace the chocolate chips with white morsels. Add nuts for color.
