Broccoli Mango Salad

The Record’s “Recipe of the Week”:
Broccoli Mango Salad by Lisa Hoskins

4 cups fresh broccoli, chopped
1 large ripe mango, peeled, seeded, and diced
1/2 cup cashews
1 small red onion, cut into thin wedges
1/2 cup buttermilk ranch dressing
2 T. orange juice
11 oz. can mandarin oranges, drained

In a large bowl, mix together the broccoli, mango, cashews, and onion.

In a small bowl, mix together the buttermilk ranch dressing and orange juice.

Pour the dressing over the salad and toss to coat. Stir in the orange sections and chill for two hours.
