Cinnamon Muffins

The Record’s “Recipe of the Week”:
Cinnamon Muffins by Rita Garoutte

2 cups flour
3 tsp. baking powder
1/4 tsp. salt
2-1/4 tsp. cinnamon
1 cup milk
1/2 cup cooking oil
1 cup brown sugar, packed
2 large eggs

Sift the dry ingredients together.

Beat the eggs slightly. Stir in the milk, oil and sugar. Add to the dry ingredients. Combine just until blended.

Grease the bottom of muffin cups or use paper baking cups. Fill 1/2 full and bake at 375° for 12-15 minutes. Makes 24.
