Disappearing Marshmallow Bars

The Record’s “Recipe of the Week”:
Disappearing Marshmallow Bars by Nancy Duncan

1/2 cup butterscotch chips
1/4 cup margarine
3/4 cup flour
1/3 cup brown sugar
1 tsp. baking powder
1/4 tsp. salt
1/2 tsp. vanilla
1 egg
1 cup mini marshmallows
1 cup chocolate chips
1/3 cup nuts, chopped

Preheat oven to 350°. Grease a 9” square pan.

Melt the butterscotch and margarine in a 3-qt. saucepan over medium heat, stirring constantly. Remove from the heat and cool to lukewarm.

Add the flour, sugar, baking powder, salt, vanilla, and egg to the mixture in the pan. Mix well. Batter will be thick. Fold in the marshmallows, chocolate chips, and nuts until just combined. Spread into the prepared pan.

Bake for 25 minutes. Center will be jiggly, but firms when cool. Cool completely before cutting.
