Harvest Baked Apples
The Record’s “Recipe of the Week”:
Harvest Baked Apples by Vernie Bradley
8 medium baking apples
1/2 cup apple or orange juice
1/4 cup firmly packed brown sugar
1/2 tsp. ground cinnamon
1 cup 2% milk reduced-fat sharp cheddar cheese
1/4 cup raisins
1/4 cup chopped pecans
Preheat oven to 350°. Remove the cores from the apples to within 1/2 inch of bottoms of apples. Pierce the skin with a sharp knife. Place the apples in a shallow baking dish.
Combine the juice, sugar, and cinnamon. Pour over the apples. Bake for 30 to 35 minutes or until the apples are tender, basting occasionally with the juice mixture. Remove the apples from the oven.
Combine the cheese, raisins, and pecans. Spoon evenly into the centers of each apple. Let stand 1 minute.
Makes 8 servings.
