Pecan Praline Candy

The Record’s “Recipe of the Week”:
Pecan Praline Candy by Gayle Brown Zamora

• 1-1/2 cups granulated sugar
• 1/2 cup brown sugar
• 1/2 cup evaporated milk
• 1/2 cup corn syrup
• 1-1/2 cups pecans
• 1/3 stick butter
• 1-1/2 tsp. vanilla
• Dash of salt

1) Combine the granulated sugar, brown sugar, evaporated milk, and corn syrup in a pan. Cook over medium heat until it reaches 230°. Stir often to prevent burning. Add the pecans and continue cooking until the mixture reaches 240°.

2) Remove from the heat. Add the butter, vanilla, and salt. Beat by hand until smooth. Cool 10 minutes then stir slowly until mixture thickens. Quickly spoon onto waxed paper.
