Popover Pizza

The Record’s “Recipe of the Week”:
Pop-Over Pizza by Nancy Duncan

1 lb. ground beef
1 large onion, chopped
1 pkg. spaghetti sauce mix
Two 8 oz. cans tomato sauce
1/2 cup water
8 oz. mozzarella cheese, shredded
2 eggs
1 cup milk
1 T. oil
1 cup flour
1/2 tsp. salt
1/2 cup parmesan cheese, grated

Heat oven to 400°. Coat a 9x13x2-inch pan with nonstick spray. Brown the meat and onion. Drain. Stir in the sauce mix, tomato sauce, and water. Cover and simmer for 10 minutes. Pour into prepared baking dish. Top with mozzarella.

Beat eggs, milk, and oil until foamy. Beat in the flour and salt until batter is smooth. Pour over the meat filling, spreading to cover the meat. Sprinkle with parmesan.

Bake 30 minutes or until puffed and golden brown. Cut into squares and serve hot. Serves 6-8.
