Potato Chip Cookies
The Record’s “Recipe of the Week”:
Potato Chip Cookies by Scott Sifferman
2 cups packed brown sugar
1 cup shortening or 2 sticks of margarine
2 eggs
2 cups flour
1 tsp. baking soda
1 tsp. vanilla
1 cup chopped pecans
1 cup crushed potato chips
Cream together the sugar, shortening or margarine, and egg. Stir in the flour, baking soda, and vanilla. Stir in the pecans and potato chips, mixing well.
Drop by teaspoonfuls onto an ungreased cookie sheet. Bake at 350° for 10-12 minutes. Makes nine dozen cookies.
