Pretzel Granola
The Record’s “Recipe of the Week”:
Pretzel Granola by Sandy Masur
1/2 cup brown sugar
1/4 cup butter
2 cups quick cooking oats, divided
1 cup thin-twist pretzels, broken into 1/4-inch pieces
1/4 cup dried apples, chopped
1/4 cup dried apricots, chopped
1/8 cup raisins
1/8 cup coconut
In a large skillet, melt the brown sugar and butter. Add 1 cup of the oats and saute until brown and crunchy. Remove from the heat and add the rest of the oats and the remaining ingredients. Serve with milk as a cereal or just munch as a snack. Makes four cups of granola.
