Sloppy Goulash

The Record’s “Recipe of the Week”:
Sloppy Goulash by Renee Bruffey

1 lb. minute steak, cubed (or 1 lb. hamburger)
2 T. oil
1 can tomato paste mixed with 2 cups water
1 pkg. sloppy joe mix
1/2 onion, chopped
1 green pepper, chopped
2 stalks celery, chopped
1 can sliced carrots
1 can diced tomatoes

Brown the meat in the oil until fully cooked. Add the tomato paste/water mixture. Add the sloppy joe mix. Stir until combined. Add the onion, green pepper, celery, carrots, and tomatoes. Simmer for 30 minutes or until the vegetables are tender. Serve over cooked rice or pasta.
