Sure-Bet Macaroons

The Record’s “Recipe of the Week”:
Sure-Bet Macaroons by Anna Bell Sapp

1 pt. orange sherbet
18.5 oz. pkg. white cake mix
1 T. almond extract
Two 7 oz. pkgs. flaked coconut (6 cups)

Soften the sherbet in a large mixing bowl. Add the cake mix and almond extract. blend well. Stir in the coconut.

Drop by rounded teaspooonsful onto greased cookie sheets.

Bake at 350° for 10-13 minutes, or until a light golden brown. Makes about 72 cookies.
