Swiss Chicken Casserole

The Record’s “Recipe of the Week”:
Swiss Chicken Casserole by Lacy Dale

4-6 boneless, skinless chicken breasts
1 small onion, diced
1/2 stick butter, diced
1 tsp. garlic, minced
8-12 slices Swiss cheese
1/2 cup milk
1 can cream of mushroom soup
1 box stuffing mix (herb or chicken flavor)
1/2 stick butter, melted

Place the chicken breasts (seasoned with salt and pepper, if desired), diced onion, diced butter, and garlic in the bottom of a casserole dish. Top with the cheese.

Combine the milk and soup. Stir well. Pour over the chicken. Sprinkle with the dry stuffing mix. Drizzle the melted butter over the stuffing mix.

Cover and bake at 350° for 50 minutes.
