Surprise Chicken
The Record’s “Recipe of the Week”:
Surprise Chicken by Reda Holmes
4 to 6 medium chicken breasts
4 medium eggs, beaten
2-1/2 cups milk
2 T. oil
3 cups cereal mixture (1 cup each Cheerios, corn flakes, Wheaties. Grind in food processor until coarse but crumbly)
1 tsp. ginger
1 tsp. paprika
1 tsp ground cloves
1 tsp. garlic powder
1 tsp. tarragon leaves
1 tsp. sage
2 tsp. salt
2 tsp. black pepper
2 tsp. lemon pepper
2 tsp. poultry seasoning
2 tsp. chopped chives
Preheat oven to 350°. Wash off chicken and set aside in refrigerator.
In food processor, mix the three cereals together until crumbly.
In a bowl, beat the eggs and milk.
Put chicken in 9x11 pan, fat side down, pieces not touching.
Combine the dry ingredients with eggs and milk, add oil. Pour mixture over the chicken so it is covered, but pan is not filled to the top.
Put on middle rack of oven and bake for 30-40 minutes. (This is like chicken with dressing on top.)
