Baby Food Cake

The Record’s “Recipe of the Week”:
Baby Food Cake by Bernie Thomas

3 eggs
1-1/4 cups vegetable oil
1 tsp. salt
2 tsp. baking soda
2 cups sugar
1 tsp. ground cinnamon
2 cups all purpose flour
4-1/2 oz. jar baby food - carrots
4-1/2 oz. jar baby food - apricots
4-1/2 oz. jar baby food - applesauce
1/2 cup walnuts, optional

1/2 cup butter, softened
18 oz. package cream cheese
1 tsp. vanilla extract
1 lb. powdered sugar

For the cake: Mix the eggs, oil, salt, baking soda, and sugar.

In a separate dish, mix the cinnamon and flour. Add to the first mixture.

In a separate dish, combine the baby foods and add to the egg/flour mixture. Pour into a greased bundt pan. Bake at 350° until golden brown.

For the frosting: Combine all of the ingredients. Spread on the cooled cake.
