Fresh Apple Cake

The Record’s “Recipe of the Week”:
Fresh Apple Cake by Kay Lincoln

2 cups apples, chopped
2 cups sugar
2 cups flour
1-1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 tsp. vanilla
2 eggs, beaten
3/4 cup oil
1 cup chopped nuts

Combine the apples and sugar in a bowl. Let stand for 10 minutes.

Sift the flour twice.

To the apple mixture, add the eggs, oil, and vanilla. Mix well.

Add the flour, baking soda, cinnamon, and salt to the apple mixture. Add the nuts last.

Pour into a large 9x13 baking pan. Bake at 350° for approx. 45 minutes or until cake tester inserted in center is clean when removed.
