Fresh Apple Cake

The Record’s “Recipe of the Week”:
Fresh Apple Cake by Diane Logan

1-1/4 cups cooking oil
2 cups white sugar
2 eggs, beaten
3 cups flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
1 tsp. vanilla
3 cups Jonathan apples
1 cup pecans

Mix the oil, sugar, and eggs together. Sift the dry ingredients together. Add to the egg mixture. Add the vanilla, apples, and nuts.

Pour into a 9”x13”x2” cake pan. Bake at 350° until done.
