Fruit Nachos
The Record’s “Recipe of the Week”:
Fruit Nachos by Anna Randleman
8-inch flour tortillas, cut into 8 wedges
1/2 tsp. cinnamon
1/4 cup sugar
Cooking spray
Vanilla yogurt
Assorted sliced fresh or canned fruits
Assorted fresh or canned berries
Shredded coconut
Mix together the cinnamon and sugar in a bowl.
Spread the tortilla wedges onto un-greased cookie sheets. Spray the tortillas with the cooking spray and sprinkle them with the cinnamon sugar. Bake at 350° for about 12-15 minutes. Remove from the oven and let cool on a plate.
Right before serving, put the wedges on your serving plate. Dollop the vanilla yogurt over the wedges then arrange the fruit, berries, and coconut on top.
For a less healthy option: Mix some plain yogurt with marshmallow cream and cream cheese.
