Ham & Cheese Muffins

The Record’s “Recipe of the Week”:
Ham & Cheese Muffins by Catherine Daniels

1-3/4 cups all-purpose flour
1/3 cup rye flour
2 tsp. baking powder
1/4 tsp. salt
1 T. brown sugar
1/2 cup cooked ham, finely chopped
1/2 cup Swiss cheese, shredded
1 lg. egg, beaten
1 cup milk
1/4 cup vegetable oil
3/4 tsp. spicy brown mustard
1/2 tsp. Worcestershire sauce
3 drops hot sauce

Combine the fist five ingredients in a bowl; stir in ham and cheese. Make a well in the center. Combine egg and the next five ingredients; add to dry ingredients, stirring just until moistened.

Spoon into greased muffin pan, filling 2/3 full. Bake at 400° for 22-25 minutes. Remove from pans immediately. Makes 1 dozen.
