Impossible Pie

The Record’s “Recipe of the Week”:
Impossible Pie by Mrs. LaVonne Converse

4 eggs
1/4 cup margarine, softened
1/2 cup flour
1 cup sugar
1 tsp. vanilla
1/4 tsp. salt
1/2 tsp. baking powder
2 cups milk
1 cup coconut

Put all ingredients in a bowl and mix with a mixer. Pour into a 10-inch baking dish. Bake at 350° until filling doesn’t stick to inserted knife. When pie is done, it will have a crust on the bottom, a custard on the inside, and toasted coconut on top.

NOTE: I had to bake mine about 35-40 minutes and then put it under the broiler to brown it nicely.
