Overnight Refrigerator Rolls

The Record’s “Recipe of the Week”:
Overnight Refrigerator Rolls by Cammie Wilkinson

2 pkgs. yeast
2-1/2 cups warm water
3/4 cup melted shortening
3/4 cup sugar
2 eggs, beaten
8-1/2 cups flour
2-1/2 tsp. salt

Sprinkle the yeast in the warm water and let dissolve. Add the shortening, sugar, eggs, salt, and 4 cups of flour. Stir until smooth. Stir in remaining flour to make a soft dough. Cover tightly and store in the refrigerator overnight or until needed.

Shape into rolls and let rise for one hour. Bake at 400° for 15-20 minutes. One-third of the dough makes 12 rolls. Can use part of the dough and put the rest in the refrigerator for later use.
