Peanut Butter Crispies

Peanut Butter Crispies by Julia Helvey
Butter for preparing dish
3/4 cup granulated sugar
3/4 cup light corn syrup
1 cup peanut butter
1 tsp. vanilla
6 cups crisp rice cereal
Lightly grease an 8x12-inch baking dish with butter or spray with pan spray.
Combine the sugar and corn syrup in a 3-quart microwave-safe bowl. Cover with a lid or vented plastic wrap. Remember to be very careful around hot steam when the lid is removed. Microwave on 100% power for 4 minutes. Stir and scrape down the sides of the bowl after every minute.
Add the peanut butter. Microwave for 15 seconds on 100% power. Stir mixture until it is smooth. Add vanilla and stir. Add the cereal and mix until it is thoroughly covered with the peanut butter mixture.
Press the mixture into the buttered dish. Chill until firm. Cut into bars and serve. Makes 2-3 dozen bars.
