Pina Colada Bread (for Bread Machine)

The Record’s “Recipe of the Week”:
Pina Colada Bread by Jami A. Lewis

1/2 cup canned crushed pineapple
1/4 cup water
1 T. rum
1 T. margarine, softened
2 cups flour
1/3 cup shredded coconut
1 T. sugar
3/4 tsp. salt
1-3/4 tsp. active dry yeast

Instructions for a bread machine: Place all ingredients in the bread pan in the order listed. Insert bread pan into bread machine and close lid. Select “sweet” option. Select “light crust” option. Bake. Makes one 1 lb. loaf.
