Popcorn Fish

The Record’s “Recipe of the Week”:
Popcorn Fish by Anna Marie Danforth

1 lb. fish (any kind), skinned, boned, and cut into bite-size pieces
1 egg white, stiffly beaten
1/2 can beer, approximately
1/2 cup flour
1/2 cup yellow corn meal

Combine the flour and corn meal, then add enough beer to make a pancake-mix consistency. Gently mix in the egg white.

Drop the fish pieces into the batter and then into hot grease (deep fryer is preferred, but not mandatory). Fry approximately 2-3 minutes or until golden brown.
