Ramen Noodle Frittata

The Record’s “Recipe of the Week”:
Ramen Noodle Frittata by Della Myers

1 pkg. Ramen noodles
3 eggs, beaten
Cheddar cheese, shredded

Cook the noodles as directed on the package, EXCEPT don’t add the seasoning to the noodles.

In a bowl, whisk the eggs with the Ramen seasoning. Add the drained noodles to the egg mixture.

Pour into a nonstick skillet, cover, and cook over medium-low heat until set. Sprinkle desired amount of shredded cheese on top. Cut into wedges.
