Refrigerator Pancakes

The Record’s “Recipe of the Week”:
Refrigerator Pancakes by Daisy Davis

2 cups flour
1 tsp. baking soda
1 tsp. sugar
3/4 tsp. salt
1 T. baking powder
1 pkg. dry yeast
1/2 qt. buttermilk
3 eggs
1/8 cup cooking oil or melted shortening

Combine the flour, baking soda, sugar, salt, baking powder, and dry yeast.

Combine the buttermilk, eggs, and oil or shortening.

Bake on a medium hot, lightly oiled griddle. These may be cooked immediately after mixing or kept covered for a few days in the refrigerator. Makes 6 large servings.
