Cherry Nut Nuggets

The Record’s “Recipe of the Week”:
Cherry Nut Nuggets by Gladys Shockley

1 cup shortening
3 oz. cream cheese, softened
1 cup sugar
1 egg
1 tsp. almond extract
2-1/2 cups flour, sifted
1/2 tsp. salt
1/4 tsp. baking soda
1-1/3 cups pecans, finely chopped, optional
Maraschino cherries, drained and halved

 Cream the shortening and cream cheese together. Gradually add the sugar, beating until the mixture is light and fluffy. Add the egg and almond extract, beating well.
 Combine the flour, salt, and baking soda. Stir into the creamed mixture. Chill the dough for a least 1 hour.
 Shape the dough into 1-inch balls. Roll in pecans and place on an ungreased cookie sheet. Gently press a cherry half into the center of each cookie.
 Bake at 350° for 16-18 minutes. Makes 4 dozen cookies.
 NOTE: I sometimes add the nuts to the dough or leave the out.
