Chocolate Marshmallow Bars

The Record’s “Recipe of the Week”:
Chocolate Marshmallow Bars by Judy Sifferman

BARS:
3/4 cup butter, softened
1-1/2 cups sugar
3 eggs
1 tsp. vanilla extract
1-1/3 cups all purpose flour
3 T. cocoa
1/2 tsp. baking powder
1/2 tsp. salt
4 cups mini marshmallows

TOPPING:
1-1/3 cups semi-sweet chocolate chips
1 cup peanut butter
3 T. butter
2 cups crisp rice cereal

For the bars: In a small bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Beat in the vanilla. Combine the flour, cocoa, baking powder, and salt. Gradually add to the creamed mixture.

Spread into a greased 15x10-inch baking pan. Bake at 350° for 15 to 18 minutes. Sprinkle with marshmallows and bake 2-3 minutes longer. Remove to wire rack.

Using a knife dipped in water, spread the melted marshmallows evenly over the top. Cool completely.

To make the topping: Combine the chips, peanut butter, and butter in a small saucepan. Cook and stir over low heat until blended. Remove from heat. Stir in the cereal. Spread over the bars immediately. Chill.
